Almond & Orange Cookies


After a few different variations of trying to get these cookies just right, the recipe below results in a soft, chewy cookie lightly flavoured with orange.

These cookies take hardly any time to throw together, making them ideal if you have a cookie craving or you suddenly get a call to say some unexpected guests are on their way and have nothing in the house to offer them with their coffee.

I prefer these cookies when still warm, however, they maintain the chewy, moist texture when completely cooled too so it’s a win-win

Almonds are a great source of nutrients such as biotin (a B complex vitamin), magnesium and manganese. Additionally, almonds are high in Vitamin E which supports skin health and can reduce

the signs of aging.

Makes 8-10 cookies


-2 cups ground almonds

-1 tsp. baking powder

-pinch of salt

-2 Tbsp. coconut oil

-1/4 cup maple syrup

-zest of 1 orange

-juice of 1/2 an orange

How To Make

Pre-heat to 180C/350F. Grease a lined baking sheet and set aside.

Put the ground almonds, salt and baking powder in a large bowl and stir to combine.

Put the remaining ingredients in a small pan and heat gently until the coconut oil has melted then pour this mixture into the dry ingredients.

Mix well until a dough forms.

Taking a golf ball size amount of dough in your hands, roll into a ball then press down and place onto the prepared baking sheet. Repeat until all dough is used.

Bake in the oven for 15-18 minutes or until starting to golden.

The cookies will still be slightly soft to the touch when removed from the oven, however, allow to cool on the baking sheet and they will firm up but will remain chewy on the inside... yum!

Serve warm (delicious!) or store in an airtight container for up to 5 days.
