Coconut & Lemon Bites
Energy bites, raw bites, energy balls, bliss balls. There are so many names for these bites that I’m never sure what to call them! For me, I call them raw bites and these coconut and lemon bites are so delicious it really doesn’t matter what you call them!
cAN’T EAT ALMONDS?
Whilst I use almonds in this recipe you can absolutely use any other nut too. Cashew nuts would make a great option and if you can’t have nuts, sunflower seeds may work too. Whilst, I’ve not tried them using seeds I do think they’d work, let me know if you try a seed option.
Great for batch making
These coconut and lemon bites are great to make batches of. They store well in the fridge or freezer. I pop a couple in a container and put them in my bag if I’m out and about. A great snack to take with you or to include in a lunch box.
Makes approximately 12 balls
-1 cup raw almonds
-6 to 8 medjool dates, stones removed
-zest of 1 large lemon
-1/4 cup desiccated coconut
-pinch of salt
-extra desiccated coconut for rolling (optional)
How To Make
Place the almonds in a food processor and pulse until the almonds are broken up and resemble breadcrumbs. You don’t want them as fine as flour.
Add the remaining ingredients, except the optional desiccated coconut for rolling, to the food processor. Blend until the mixture is well combined and holds together when you press some dough between your fingers.
Take approximately a heaped tablespoon of mixture and roll in to a ball. Continue to do this with the rest of the dough.
If using desiccated coconut to roll the balls in, sprinkle that onto a plate and roll the balls gently in the coconut.
Place the lemon and coconut bites in an airtight container and place in the fridge. Store for up to 5 days
