 Scottish Strawberries are in season right now and I cannot get enough of them! They are juicy and sweet and I’m enjoying them as they are, mixed with some coconut yoghurt, on toast with nut butter and in this salad.

I made this salad last week and it’s pretty much been on repeat since. This salad is really simple to throw together as either a light lunch or as a side dish. If you do want to make it a more heartier meal then I would add a protein sauce such as chickpeas, any cooked beans, green peas, cooked chicken or shrimp.

It’s all about those seasonal strawberries right now!

I am not normally the biggest strawberry fan but when they’re in season they are the best. Plus, it’s Wimbledon right now so it’s only right to have strawberries in the house. I mean, Wimbledon and strawberries go together like Tom & Jerry, gin & tonic, Fred & Ginger….you get the drift!

The salad recipe below serves 1 but it is easily doubled or more. I do hope you enjoy it as much as I do.

Serves 1


-2 big handfuls of baby spinach (approx. 100g), washed thoroughly & dried as much as possible (if you don’t have baby spinach then rocket (arugula) or any type of lettuce will work)

-1/4 avocado, peeled & diced

-3 large strawberries, stem removed, washed & diced

-1/8 small red onion, peeled & finely sliced

-1 heaped Tbsp. sunflower seeds


- 1 Tbsp. extra virgin olive oil

-1 Tbsp. balsamic vinegar

-salt & pepper to taste

How To Make

  1. In a small bowl combine the dressing ingredients and mix well. Set to one side.

  2. For the salad, you can put all the ingredients (except the dressing) into a bowl and mix to combine and then plate up


  3. Place the spinach on a plate or in a pasta bowl then add the remaining ingredients.

  4. Drizzle over the dressing and serve immediately.
